Searching high and low for the perfect side dish to complement your meal? How about some garlic parmesan red potatoes? They are easy to make and taste delicious!
I often stand in my pantry wondering which canned vegetable or rice mix is going to win the lucky spot along side a few barbecue pork chops or chicken. Canned veggies are OK, but sometimes a gal just needs some variety!
With gardens in full bloom, grabbing fresh produce from your local super market can be an easy thing during the summer. The vibrant colors of squash, peppers, zucchini, tomatoes and more fill the isles of our local produce stand. We picked up some baby red’s because there are so many things you can do with this magic potato! I’ve got recipes for the little smashed baby red’s with cheese & garlic, plain ole’ baby red mashed potatoes, baby red’s along side carrots and onions in a pot roast, and now garlic parmesan red potatoes. Doesn’t it all sound delicious?
I only had about an hour to prepare dinner and needed something that is kid friendly to make and will basically cook with little supervision. Garlic parmesan red potatoes are the perfect side dish if you want something that the kids can help prepare & is low maintenance in cooking.

Now, I have seen this recipe on Pinterest many times. Most recipes call for fresh minced garlic and onion. May I insert my favorite phrase from a snappy tune that we all know so well…. “Ain’t nobody got time for that”. Yes, there are times in The Hot Mess Kitchen where I will pull out all the stops and use “fresh” everything. But for now, this gal is on a budget and I used coupons to get the McCormick seasonings you see above. There’s no other preference than “what’s on sale” when it comes to ingredients for the kitchen. Most of the time I compare prices and we end up at Walmart because the toy aisle becomes a negotiation tool for good behavior with my kids while shopping.
Back to the cooking.
My helpers wanted to get in on the action and help me cook dinner. What better activity for them to participate in than handing them each a Ziploc bag of potatoes to shake until their little hearts are content. It’s a great upper arm workout. Goodbye shake weight, hello Ziploc bag of potatoes!
Preparing garlic parmesan red potatoes is simple!
thoroughly wash potatoes in the sink
cut potatoes in to quarters
Put potatoes in a gallon sized Ziploc bag and add the following:
garlic powder, onion powder, oregano, and parmesan cheese
(4 slices per potato. you can get creative here, but I was going for a specific look with the slices for picture quality)
(I only measured the amount of EVOO I used. Everything else was just sprinkle until the potatoes are well covered. If I were going to measure it all out, it would be about 2 tablespoons of each ingredient. The EVOO was easier to measure by eye because the potatoes needed to be well coated for cooking.)
Once you have given the potatoes a good shake and they are well covered, spread them out evenly across a baking sheet covered in aluminum foil. I sprayed a bit of Pam EVOO spray on the foil before putting the potatoes down to make sure they did not stick. Potatoes are tricky little things to cook. If they stick to something its like half of the potato rips apart and then you’ve lost your side dish.
Bake in the oven for about 40 minutes at 350 degrees. I checked my potatoes about 1/2 way through their cook time and tossed them lightly with a spatula to ensure they were cooking evenly. The results….
