Looking for a good cornbread muffin recipe? I’ve got one that was a game day win.

Over the weekend, we celebrated Superbowl Sunday with friends, football and a seafood boil. Just the seafood alone was delicious, but I wanted something as a side dish that spiced things up a bit. I found a recipe online and added a surprise ingredient to it! Giving comfort food a twist and spicing things up with these Serrano pepper bacon cheddar cornbread muffins.

These delicious cornbread muffins will certainly put some south in your mouth and leave you wanting more. I was looking for something with a kick to serve alongside our snow crab seafood boil which also included spicy sausage, corn and red potatoes. I have always added a few extra ingredients to my cornbread to make it sweet and this recipe was no exception.

My secret ingredients for this recipe are a tablespoon of sugar to sweeten the cornbread and minced Serrano peppers to give it a bit of heat. I always add just a bit of sugar to our cornbread mix because it can otherwise be a bit bitter depending on the recipe. So why the Serrano peppers? A Serrano pepper is quite a bit hotter than a jalapeno pepper. The heat of the pepper added to the other ingredients blends to a delicious combination of flavors.

Here’s how I put together a batch of Serrano pepper bacon cheddar cornbread muffins for the game.


While this cornbread recipe was absolutely delicious served alongside seafood, I would also pick this recipe again if I were baking Sunday ham with collards. Jiffy Corn Muffin Mix has always been my go to brand because of the quality and price.

  1. The muffins are amnziag ..I did make some adjustments due to what was on hand .self rising flour, only had lite brown sugar so added some blackstrap molasses and used hoop cheddar cheese .these muffins have just the right amount of spiciness to them love love love them
