Blender Salsa

No dicing, no chopping, no standing over a cutting board. The blender does the work.
Prep time: 5 minutes
Cook time: None, this doesn’t touch a stove
Yield: About 6 cups
Ingredients:
- 2 cans (14.5-15 oz) fire-roasted tomatoes
- 1 can (14.5-15 oz) diced tomatoes
- 1 can (14.5-15 oz) mild Rotel
- 1 teaspoon cumin
- 1 teaspoon minced garlic
- 1-2 tablespoons lime juice (or lemon, depending on what you’re going for)
- Salt and pepper to taste
Instructions:
- Add all the canned tomatoes to your blender.
- Add the cumin, minced garlic, lime juice, salt, and pepper.
- Blend until it reaches whatever consistency you like, chunkier for a few short pulses, smoother if you let it run longer.
- Taste and adjust seasoning if needed. We normally add more salt after, not before.
- Serve with chips.
Notes:
Onion is optional here, it’s a completely valid version of this salsa without it, don’t feel like you’re skipping a required step by leaving it out. Lime is the go-to citrus in this house, but lemon works if that’s what you’ve got on hand.
Short on time? This already is the short-on-time version, that’s kind of the whole point. No chopping, no cooking, dump it in the blender and go.
