Fried Cabbage with Bacon

The bacon grease is doing the heavy lifting here. Let it.
Prep time: 10 minutes
Cook time: 20-25 minutes
Serves: 4-6
Ingredients:
- 1 head cabbage, chopped and washed well
- 6-8 slices thick-cut smoked applewood bacon
- 1/4 stick butter
- Salt and pepper to taste
Instructions:
- Cook the bacon in a large pan until crispy, then remove it and set aside, leaving the grease in the pan.
- Add the chopped cabbage to the pan with the bacon grease. Add the butter.
- Cook over medium heat, stirring occasionally, until the cabbage cooks down, about 15-20 minutes.
- Season with salt and pepper to taste.
- Chop the bacon and add it back into the pan, stir to combine.
Notes:
Don’t skip the thick-cut smoked applewood bacon if you can help it, the smokiness is what carries the whole dish. Regular bacon works in a pinch, but it won’t have quite the same depth.
Short on time? Pre-chopped bagged coleslaw mix (the plain shredded cabbage kind, not the kind with dressing) works here and skips the washing and chopping step entirely. Cooks down just as well.
