Fried Cabbage with Bacon

The bacon grease is doing the heavy lifting here. Let it.

Prep time: 10 minutes
Cook time: 20-25 minutes
Serves: 4-6

Ingredients:

  • 1 head cabbage, chopped and washed well
  • 6-8 slices thick-cut smoked applewood bacon
  • 1/4 stick butter
  • Salt and pepper to taste

Instructions:

  1. Cook the bacon in a large pan until crispy, then remove it and set aside, leaving the grease in the pan.
  2. Add the chopped cabbage to the pan with the bacon grease. Add the butter.
  3. Cook over medium heat, stirring occasionally, until the cabbage cooks down, about 15-20 minutes.
  4. Season with salt and pepper to taste.
  5. Chop the bacon and add it back into the pan, stir to combine.

Notes:
Don’t skip the thick-cut smoked applewood bacon if you can help it, the smokiness is what carries the whole dish. Regular bacon works in a pinch, but it won’t have quite the same depth.

Short on time? Pre-chopped bagged coleslaw mix (the plain shredded cabbage kind, not the kind with dressing) works here and skips the washing and chopping step entirely. Cooks down just as well.
