Disney Breakfast Bowl (Skillet Version, Feeds the Whole Family)

Cook time: 30-40 minutes
Serves: A whole family, easily 6-8 servings depending on how hungry everyone is
Ingredients:
- Avocado oil and butter, for the pan
- Bacon, chopped
- 6-7 large baby red potatoes, diced (Yukon golds work well too, just avoid a potato that breaks down during cooking)
- Onion, diced
- Green bell pepper, diced
- 1 dozen eggs, scrambled
- 1 cup medium or sharp cheddar, shredded
- Salt and pepper to taste
- Garlic powder, optional

Instructions:
- Heat your cast iron skillet with a little avocado oil. Cook the bacon until crispy, then remove it and set it aside. Give it a rough chop once it’s cooled enough to handle.
- Add butter to the leftover bacon grease still in the skillet. Add the diced potatoes and cook until they’re getting crispy on the edges, this takes the longest so give it time.
- Add the onion and green pepper to the skillet with the potatoes. Cook until softened.
- Add the chopped bacon back into the skillet.
- While that’s all going, scramble your dozen eggs separately in another pan.
- Add the already-scrambled eggs into the skillet and stir everything together to incorporate.
- Top with the shredded cheddar and let it melt in.
- Season with salt, pepper, and garlic powder if you’re using it. Serve straight out of the skillet.

Notes:
Stick with a waxy potato here, like baby red or Yukon gold. Starchier potatoes (russets) tend to break down and turn mushy with this much stirring and cook time, and you want distinct potato pieces, not potato mush.
This isn’t a copy of the Disney version, it’s better, honestly. Disney’s version is scrambled eggs and potatoes topped with cheddar, bacon, and green onions, no bell pepper. This version cooks everything together in one skillet instead of layering toppings on top, and swaps in green bell pepper instead of green onion. Same comfort food energy, no park ticket required.
