Turkey Chili (Ready in 30 Minutes)

Secretly has fiber in it. We don’t talk about that part until after they’ve eaten it.
Prep time: 5 minutes
Cook time: 25-30 minutes (stovetop) or several hours on low (crockpot)
Serves: 4-6
Ingredients:
- 1 pound ground turkey
- 1 can (15 oz) sweet corn, drained
- 1 can (15 oz) black beans, drained
- 1 can (10 oz) Rotel
- 1 cup water
- 1 packet mild chili seasoning mix
- Optional: ground flax seed, for a fiber boost nobody needs to know about
For serving:
- Shredded mild cheddar
- Sour cream
- Tortilla chips

Instructions:
- Brown the ground turkey in a large pot.
- Once browned, add the drained corn and black beans.
- Add the Rotel, water, and chili seasoning mix. Stir to combine.
- Stovetop: Simmer for about 25-30 minutes, stirring occasionally, until everything’s heated through and the flavors come together.
Crockpot: Transfer everything to the crockpot and cook on low for several hours instead. - Stir in ground flax seed at this point if you’re using it, nobody will taste it, they’ll just get healthier without being consulted.
- Serve topped with shredded cheddar and sour cream, tortilla chips on the side for dipping.
Notes:
This comes together fast enough for a weeknight but also holds up fine in a crockpot if you want to set it and forget it. Either way works, so use whichever fits your day better.
